Sodium Bicarbonate is primary leavening base in most of the formulations such as Cakes, cookies, biscuits, pizza and many other baked products is Sodium bicarbonate. Combining Sodium Bicarbonate with leavening agents in the presence of water, heat or both releases Carbon dioxide that causes the cakes, breads and other baked goods to rise.
